Butter Tips & Recipes
When
Eric Stewart started his real estate career, he and his broker,
Charlie Llewellyn, decided it would be a nice way to reach
out to the community through gifts of Apple Butter from McCutcheons
(a local business based in Frederick, MD). Today, over 17
years later, Eric delivers over 11,000 jars of Apple Butter
to area communities and past clients.
Many
people know and love this delicious treat, but some wonder
how to best use their gift. To help you enjoy your Apple Butter
more fully, we have put together the following recipes and
tips. Enjoy your Apple Butter from Eric Stewart!
Tips

You can use Apple Butter in place of
applesauce or oil to cut the fat.

McCutcheon's Apple Butter is delicious
mixed into cottage cheese. Try some on pancakes, waffles
or french toast.

Top bagels or English muffins with
McCutcheon's Apple Butter for a quick breakfast or snack.
Spread some cream cheese on first for an added treat.

Still prefer the PBJ. Fix your favorite
peanut butter and McCutcheon's Apple Butter! Just lightly
butter both sides for a golden and gooey delight. YUM

Use the Gingerbread recipe from The
Joy of Cooking ( or your Favorite ) Top with a generous
icing of McCutcheons Apple Butter and serve with Whipped
Cream on the side. This is great family desert or to take
to holiday gatherings.

APPLE BUTTER CHEESECAKE
2 (8oz) pkgs cream cheese
2/3 cup McCutcheon's Apple Butter
or any McCutcheon's Fruit Butter
2 eggs
1 ready to use graham cracker crust
Blend softened cream cheese and apple butter
until smooth. Add eggs and blend well. Pour mixture into crust
and bake at 350 F for 40 minutes. Cool completely. Spread
top with a thin layer of apple butter. If desired serve with
whipped topping and chopped walnuts.
APPLE BUTTER OATMEAL BREAD
2 cups oatmeal
2 teaspoons salt
1/3cup maple syrup
2 TB canola oil
1½ cups apple butter
1TB yeast
8 to 10 cups flour
Place oatmeal, salt, syrup, canola oil, and
apple butter in a large bowl. Pour 1½ cups boiling
water over mixture and set aside. Soften yeast in 1/3 cup
warm water. Add mixture from large bowl. Stir in flour until
your hands must replace your spoon as mixers. Knead dough
for 10 minutes, adding more flour if it is too sticky. When
dough in smooth and elastic, place in oiled bowl and oil top
of dough as well. Let rise 1 hour in a warm place until double
size in bulk. Punch down dough and knead again for 10 minutes.
Form into two loaves and let rise in two buttered loaf pans
for 50-60 minutes. Then bake for 50 minutes at 350 degrees.
Remove from pans and thump bottom of loaves. If they sound
hollow they are done. Cool on wire racks completely for best
slicing or cut into them immediately if you can’t wait!
APPLE BUTTER MUFFINS
1 ¾ cup flour
1/3 cup sugar
2 tsp baking powder
½ tsp cinnamon
¼ tsp nutmeg
¼ tsp salt
1 egg, beaten
¾ cup milk
¼ cup canola oil
1/3 cup apple butter
1/3 cup pecans, chopped
2 TB sugar
Preheat oven to 400 degrees. In bowl, combine
flour, 1/3 cup sugar, baking powder, salt, cinnamon and nutmeg.
In separate bowl combine egg, milk and oil. Add to flour mixture.
Spoon tablespoon of batter into muffin cup. Spoon teaspoon
of apple butter, then remaining batter. Combine pecans and
2 TB sugar. Sprinkle atop batter. Bake for 20 minutes.
APPLE BUTTER CAKE
3 cups flour
1 1/2 tsp soda
3/4 tsp salt
3/4 tsp nutmeg
3/4 tsp cinnamon
3/4 tsp ground cloves
3/4 cup softened butter or margarine
1 1/4 cups sugar
3 eggs
1/2 cup buttermilk
1 1/2 cups apple butter
1/2 cup softened butter or margarine
1/4 cup evaporated milk
2 tsp vanilla
1 lb. (4 cups) powdered sugar
Stir together flour, soda, salt, nutmeg,
cinnamon, and ground cloves. Beat butter and sugar (3/4 cup)
together until fluffy. Beat in eggs, one at a time. Combine
buttermilk and apple butter. Add alternately with the flour
mixture, mixing well after each addition. Pour into 2 greased
9" round pans or one 9x13" pan. Bake at 350 degrees
for 35 to 40 minutes. Remove from layer pans. Cool on cake
rack.
Frost cooled cake with creamy vanilla frosting,
made as follows: In small mixing bowl, combine 1/2 cup butter,
evaporated milk, vanilla and powdered sugar. Mix until frosting
is smooth and shiny. If too thick, add a few drops of evaporated
milk.
APPLE BUTTER COOKIES
1/4 c Butter or Margarine - softened
1 c Packed Brown Sugar
1 Egg
1/2 c Quick Cooking Oats
1/2 c Apple Butter
1 c All-purpose Flour
1/2 ts Baking Soda
1/2 ts Baking Powder
1/2 ts Salt
2 tb Milk
1/2 c Nuts, chopped
1/2 c Raisins
In a mixing bowl, cream butter and sugar. Beat in egg, oats,
and apple butter. Combine dry ingredients; gradually add to
creamed mixture along with the milk; beat until blended. Stir
in nuts and raisins. Chill well. drop by teaspoonfuls onto
a lightly greased cookie sheet. Bake at 350 degrees for 15
minutes.
NOTE: Freeze baked cookies in tins or freezer
bags for the months ahead.
APPLE BUTTER BARS
1 1/2 c Flour
1 ts Baking soda
1 ts Salt
2 1/2 c Uncooked quick oats
1 1/2 c Sugar
1 c Butter; melted
1 1/2 c Apple butter
Preheat oven to 350°. Grease a 13x9x2" pan. Combine
flour, baking soda, salt, oats and butter; mix in butter.
Press half into bottom of pan; spread with apple butter. Sprinkle
top with remaining crumb mixture, pressing gently with back
of spoon. Bake 55 minutes or until lightly browned. Cool and
cut into bars.
APPLE BUTTER BAKED BEANS
1 28-ounce can nonfat baked beans
2 tablespoons prepared mustard
1/2 cup apple butter
1/3 cup raisins
Fresh ground black pepper to taste
Combine all ingredients in a small nonreactive
saucepan. Set pan over medium heat. Cook for about 6 minutes,
stirring occasionally, until heated through.
To heat in a microwave oven, place all ingredients
in a microwave-safe casserole. Stir, then cover. Cook on high
(100 percent power) for 3 to 4 minutes.
